And it defends your margin. Sour is a category where shoppers judge on intensity and novelty rather than price-matching a national brand, so you are not competing on a number the customer already knows.

The sour formats, by the case

Embossed sour discs

The dense, stamped sour disc is the backbone of a Swedish sour wall. It holds shape in a bin, it is cheap per pound in a big case, and one bin covers a lot of shoppers. The S-Marke discs land in 8.81 lb cases: S Marke Sour Apple, S Marke Sour Strawberry and S Marke Sour Blue Raspberry are all gelatin-free and contain wheat/gluten. S Mark Sour Blackcurrant is the darker, more adult flavor in the family, also gelatin-free and containing wheat/gluten.

Buy at least one disc SKU. Two is better, because it gives you a bright flavor and a deep one.

Sour skulls

The skull is the signature Swedish shape and the strongest impulse driver we ship. Bubs Lemon/Raspberry Skulls from BUBS come in a 7 lb case and are gelatin-free and vegan. XL sour gummies

Build a sour intensity ladder, not a flavor list

The most useful way to plan a sour section is by how hard it hits, from mild to extreme. Shoppers self-select along that ladder, and the ladder is also how you sell up.

  1. Mild sour. Fruit sours and sour fish. The entry point for kids and cautious adults. Sour Swedish Fish is gelatin-free and works here.
  2. Medium sour. Embossed discs and sour skulls. The volume middle of the category, and where most of your pounds will move.

Three to four rungs is enough. If every bin is at the same intensity, you are competing with yourself.

Merchandising a sour section

Put sour at the entrance end of the wall. It is the brightest and loudest part of the assortment, and it pulls people down the rest of the fixture. Group by intensity rather than by flavor, so the ladder is visible at a glance and staff can point people up it.

Label every bin with the exact dietary flags from the product page. Sour is the category where you get the most questions about gelatin, and where the answers vary most between neighbouring bins. Rotate first in, first out. Sour coatings pull moisture, so a bin left too long clumps and loses its bloom, and dull sour candy stops selling before it goes stale.

The buying math

Divide every case price by its weight to get cost per pound, then set one blended per-pound retail price across the wall and confirm it still profits on your most expensive sour case. XL pieces empty a bin faster per dollar than dense discs, so check them specifically against the blend.
