Swedish Candy Textures: Skum, Gum, Chew and Sour

Swedish candy divides into five working textures: skum (light aerated foam), gum (firm moulded gummy), chew (dense toffee-style bites), sour (a tart coating over either base), and layered slices or rolls. A retail set that deliberately covers three or four of these outsells a set built on flavour alone.
We ran candy shops in Sweden before we became importers, and the most useful thing we learned behind the counter is that shoppers choose with their teeth. Someone who wants a foam bite will not accept a firm gummy in the same flavour. This is the map we use when we help an account build a first order.
Why texture is the buying unit, not flavour
Flavour ranges are almost infinite and largely interchangeable. Texture ranges are short, and each one owns a different shopper. Foam is the child's first candy and the dessert topping. Firm gum is the everyday scoop and the biggest volume driver. Chews are the pocket item that survives a bag and a car. Sours are the teenage magnet. Slices and rolls make a wall look designed.
Build a bin plan around those five and you get a wall that looks intentional. Build it around "strawberry, cola, watermelon, raspberry" and you get four bins that compete with each other.
1. Skum: the aerated foam
Skum is whipped, aerated sugar candy that sets light and soft, so it collapses under the teeth rather than resisting them. It is its own category in Sweden, not a marshmallow sub-type, and it is the most distinctly Swedish texture we import. Deeper detail: Swedish foam candy and skum.
From Franssons, a foam specialist, we carry Franssons Foam Strawberries / Skumjordgubbar and Franssons Foam Mushrooms. Both contain gelatin and are not vegan. Bulgari adds Bulgari Marshmallow Ice Cream Cones, also gelatin.
For gelatin-free foam, BUBS Banana from BUBS is the classic foam banana and is gelatin-free and vegan. Frisia Cola Foam Skulls from Frisia are gelatin-free, and Sour Foamy Zoo Monkey is a gelatin-free sour foam animal.
Retail fit: pick-and-mix bins, dessert toppings, kids' pre-bagged mixes. Foam weighs almost nothing, so a scoop looks generous. Keep it cool and dry, because it takes on humidity faster than gum.
2. Gum: the firm moulded gummy
Gum is the workhorse: firmer, chewier, and it holds its shape in a warm shop. The Swedish version tends to be less rubbery and more fruit-forward than a standard American gummy, which is the difference customers notice first. Our Swedish gummy candy guide covers the category in full.
The BUBS gummy range is the backbone here, and all of it is gelatin-free and vegan: BUBS Forest Berries ovals in 90g bags, Bubs Tutti Frutti, BUBS Cool Fruity Pear and BUBS Wild Strawberry Pomegranate. Retail fit: the largest share of your bins, plus 90g impulse bags at the register. Gum tolerates a busy shop better than any other texture.
3. Chew: toffee and soft bites
Chews are dense, slow-eating pieces that behave differently in a shop. They do not need a bin, they survive being carried around, and they sell at the counter rather than off the wall.

For the softer bon bon style, Lonka makes Lonka Soft Bites Strawberry Bon Bon, which is gelatin-free, and Lonka Caramel Soft Bites Bon Bon, for which we have no ingredient data listed, so we make no dietary claim on it. BUBS Goody Banana/Toffee bridges the two worlds in 90g bags and is gelatin-free and vegan.
Retail fit: checkout baskets, pre-packed gift bags, hotel and office channels. Chews are the texture that works where a pick-and-mix wall does not fit.
4. Sour: a coating over any base
Sour is not really a separate material, it is a treatment applied to foam, gum or chew, which is why a sour section built without regard to texture ends up feeling repetitive. The formats are covered fully in Swedish sour candy types.
Firm sour discs come from S-Marke: S Marke Sour Apple and S Marke Watermelon, both gelatin-free and both containing wheat and gluten. Soft coated pieces come from Sura Colanappar Sour Cola Pacifiers, gelatin-free and containing wheat and gluten. Fizzy rings come from Franssons Fizzy Rings, gelatin-free.
On the gelatin side of the sour aisle: Hallonshots Grahns Raspberry Sour Shots from Hallonshots, Candy People Super Sour from Candy People, Mormor Lisa Badge Sour Fizzy from Mormor Lisas, and Vidal XL Sour Cola from Vidal, which also contains wheat and gluten.
Retail fit: the highest-traffic bins on the wall. Keep lids closed, because sour coatings pull in moisture.
5. Slices and rolls: the layered pieces
The last family is the layered one: fruit slices with a contrasting centre, plus spiral rolls. These photograph well and are the most requested pieces for events and dessert tables.
Rainbow Rolls are the spiral, gelatin-free and containing wheat and gluten. Watermelon Licorice Slices and Blue Raspberry Licorice Slices are the layered slice format, both gelatin-free and both containing wheat and gluten. Vidal Passion Fruit Slices is the same idea in a tropical flavour, gelatin-free and containing wheat and gluten.
One clarification, because the word "licorice" on these labels sends American buyers down the wrong path: these are fruit-flavoured layered slices, not salty licorice.
